Steps to make Quinoa au gratin:
- In a sauce pan add 2cups of water and add stock.cubes or prepare vegetable stock at home.For this heat water to this add 1 chopped carrot 1 chopped onion few garlic cloves 1 stick cinnamon 2 bay leaves few coriander stems crushed pepper and let it simmer for 10-15 mins. Strain it and then use
- Now add washed quinoa to this stock and let it cook on low flame for 15 mins till it becomes glossy
- Cover it and let it cool down
- Now in a bowl add cooked quinoa, broccoli, carrot, spring onion and capsicum
- Now add red chilli flakes mixed herbs and red pasta sauce.To make red pasta sauce. Heat 1 tsp olive oil in a sauce pan.To this add 1 tbsp chopped garlic and 1 finely chopped white onion..saute and add 1 cup.tomato.puree and 3 tbsp.tomato.sauce.also.add salt and pepper to taste. Add mixed herbs and chilli flakes to taste and cook on low flame for 15 mins
- Now add half cheese and mix these and spread this mixture in a baking dish
- Now mix bread crumbs and remaining cheese and.spread on quinoa mixture.Add almond flakes on top
- Now decorate with cherry tomatoes cut in halves.
- Bake in a.preheated oven.at 190 degree for.20.mins
- Serve hot
