- Marinate carrots in softened butter, hot sauce, and brown sugar (either in gallon ziplock or in pan)
- Turn on grill to medium high
- If you are making ranch from scratch, mix yogurt, ranch seasoning, and tiny splash of olive oil.
- Put vegetable bits in broiler on high til brown/black and crispy.
- Grill carrots for 20-25 minutes, turning occasionally. Should be slightly blackened and able to put a fork through.
- While carrots grill, combine vegetable bits, pepitas, spicy BBQ seasoning and about 1 tbsp of brown sugar with mortar & pestle.
- Pull carrots off grill. Brush a tiny bit of butter and add seasoning mix. Reserve a bit of seasoning to top dish with.
- Spread ranch on plate, top with carrot and seasoning mixture, garnish with additional seasoning.
