- Combine eggs, garlic,salt, pepper and chili powder
- Pour a small amount of egg mixture into a shallow casserole type dish just enough to cover the bottom. I used one measuring 10cm by 10cm, 6cm depth.
- Layer the potatoes, aubergine and spring onion.
- Add half of the chopped bacon
- Layer the carrots and both capsicums
- Spread the other half of the bacon on top.
- Pour over the rest of the egg mix. don't forget to give it a stir first otherwise all your pepper will be in one spot.
- Bake in oven for 25-30 minutes
- Sprinkle over grated cheese and bake until golden. (10-15 mins)
- Remove from oven and let stand for 5-10 minutes.
- Cut and serve
