- Cook pasta in water with a pinch of salt till al dente. Run under cold water, drain and set aside.
- Meanwhile, in a medium sized wok add olive oil, garlic cloves finely chopped and onions thinly sliced.
- When onions turn golden or translucent, add thinly sliced bell pepper and carrots.
- Chop the tomatoes into small cubes and puree them in a blender. Add this sauce to the vegetables.
- Add salt, black pepper, oregano and any other spices or herbs of your choice.
- Add the pasta and mix well to cover the pasta in the sauce.
- Put in a baking dish and grate cheese on top. Put in the oven at 350°F for 5 min or till the cheese melts. This step is optional. Be careful not to overcook the pasta! If you really love cheese you can grate some on top while serving! :)
