Undhiyu is one of the most favored of current trending foods in the world. It is easy, it is quick, it tastes delicious. It is enjoyed by millions daily. Undhiyu is something which I have loved my entire life. They are fine and they look wonderful.
To get started with this particular recipe, we have to first prepare a few ingredients. You can have undhiyu using 42 ingredients and 15 steps. Here is how you can achieve it.
The ingredients needed to make Undhiyu:
- Take For green paste:
- Make ready 7-8 green chillies
- Make ready 13-15 garlic cloves
- Take 1 big piece of ginger around 3" in size
- Get 1 bowl green coriander leaves chopped
- Make ready to taste Salt
- Make ready For tempering:
- Prepare 4 tbsp Oil
- Take 1 tsp mustard seeds
- Get 1 tsp fenugreek seeds
- Get 1/2 tsp asafoetida
- Make ready 1 &1/2 tsp turmeric powder
- Take 2 tsp coriander seeds powder
- Get 1 tsp roasted cumin seeds powder
- Take 1 tbsp garam masala
- Get Vegetables required:
- Prepare 12 violet brinjals, put cuts at 90° with bottom part attached
- Prepare 1 cup green pigeon peas
- Make ready 1 cup Indian beans (one which has three beans or surti papadi)
- Make ready 1/2 cup chopped spring onions
- Prepare 2 medium size sweet potatoes cut into pieces
- Get 2 medium size potatoes cut into pieces
- Take 3/4 cup purple yam cut into pieces
- Get 1 big tomato cut into long slices
- Get 1 ripe banana washed and cut alongwith the skin
- Take to taste Salt
- Prepare Green garlic finely chopped
- Make ready For methi bhajiyas/muthiyas
- Take 2 cups fenugreek leaves finely chopped
- Take 1 cup chickpeas flour (besan)
- Make ready to taste Salt
- Make ready 4-5 cashews broken into small pieces
- Prepare 6-7 raisins
- Prepare 1 tsp coriander seeds powder
- Get 1/2 tsp cumin seeds powder
- Prepare 1/4 tsp turmeric powder
- Prepare As required oil for frying
- Make ready Served with:
- Make ready Fine namkin sev
- Make ready Puris
- Prepare Jalebi
- Prepare Tilgud
Steps to make Undhiyu:
- Make the green paste by grinding it into smooth paste and divide it into 3 parts.
- Add one part to Indian beans (surti-papdi) and coat it properly. Let the beans get marinated with the green paste.
- Add second part to potatoes, sweet potatoes and purple yam. Let them also get marinated in the green paste.
- Last part add to the stuffing to be filled in the brinjals. Stuff the brinjals using spring onions, green pigeonbeans, coriander seeds powder, cumin seeds powder and turmeric powder.
- Stuff the brinjals with the stuffing and keep it aside for sometime.
- Mix the ingredients of meethi bhajiyas/muthiyas and make small dumplings.
- Deep fry them in oil on medium heat till they turn golden brown.
- In a pressure pan put oil for tempering and add mustard seeds and fenugreek seeds. Heat it.
- After mustard seeds crackles add asafoetida, turmeric powder, coriander seeds powder and cumin seeds powder.
- Now first make the layer of marinated surti-papdi, the stuffed brinjals and finally place the layer of potatoes, sweet potatoes and purple yam. Add 1/2 cup water.
- Pressure cook till one whistle and then on slow flame for 15 mins.
- Now on the cooked vegetables make layer of the meethi bhajiyas, banana and tomato.
- Cover the pressure pan with the lid but no whistle and heat it for about 10 mins.
- Serve the ready undhiyu topped with fine namkin sev.
- Also serve puri, jalebi and tilgud along with the Surti undhiyu.
