The ingredients needed to make Spinach and Ricotta Bake:
- Take spinach roughy chopped
- Prepare lemon zest
- Make ready thyme
- Prepare eggs beaten
- Get ricotta cheese crumbed
- Make ready mozzarella cheese grated

Divide the spinach mixture between the pancakes. Stir the spinach and basil through the sauce until wilted. Season with salt and pepper to taste. Scatter over the mozzarella, dot with the ricotta mixture and sprinkle with the grated Parmesan.
Instructions to make Spinach and Ricotta Bake:
- Preheat oven to 190 degrees. In a separate bowl mix eggs and crumbed ricotta. In a separate bowl mix spinach, thyme and lemon zest.
- Add the ricotta mix to the spinach mix, I did with my hands, it was easier. Place in the greased oven proof dish and bake for 20 minutes uncovered till crispy and a bit charred.
- Once a bit charred(I love the flavour it brings) add mozzarella and bake for further 10 minutes. Serve hot, alone or with preferred meat.
Season with salt and pepper to taste. Scatter over the mozzarella, dot with the ricotta mixture and sprinkle with the grated Parmesan. Combine the cooked pasta with spinach, ricotta and nutmeg. Place the pasta in a dish and top with tomato sauce. Serve with fresh ground black pepper and parmasan.
