  1. Take mint and corriender leaves in a mixer jar add garlic,green chillies and grated coconut and make paste of it and keep aside it
  2. Now heat ghee in pressure cooker add cumin,bay leaves, cinnamon, cardamom, cloves and cashew nuts one by one and roast,now add julien onion and wait to colour change,now add chopped tomato and turmeric powder stir it till tomato half cook
  3. Now add mix Vegetables,potato chunks,half boiled chickpea and stir it for a minute add corriender and mint paste in it and again stir for a minute on medium flame
  4. Now add soaked rice and again stir for a minute, add salt to taste and mix well
  5. Now add sufficient water and mix,now close the cooker lid for 2 to 3 whistle or till rice completely cook
  6. Mint and Chola rice is ready to serve,serve hot with papad and achar for more taste
