- Prepare all of your ingredients before starting.
- Cut the pointy end off the onion leaving the roots at the other end intact. Peel off the outer brown layers. Cut the onion in half through the roots. Lay the onion flat on the chopping board, slice in strips towards the roots but without going through the roots. Then turn it round and slice again across rather first cuts to create chopped onion.
- If you have a garlic press, use this to crush the peeled garlic cloves. If you don’t have a press, use your knife to finely dice the garlic.
- Place your saucepan over a low heat. Add the oil, then the onions. Stir then turn your heat up slightly. You want the hob to be hot enough to cook the onions, but not so hot that you end up browning the onions. In a sauce like this, browned onions can make the sauce bitter.
- After about 5 minutes the onions should be starting to soften up and will look a little translucent. Now add your tomato purée and garlic and stir well. Keep cooking for a few minutes.
- Now add your tinned tomatoes and oregano. Stir well then let the pan sit, partly covered by the pan lid, over a low to medium heat to simmer. simmering means that the sauce isn’t boiling, but it’s just hot enough for little bubbles to rise to the surface and you can hear it bubbling gently.
- Simmer for 20 mins then check the onions are nice and soft. If they are it’s done. Remove from the heat and allow to cool completely. You can blend at this stage if you want a smooth sauce. Store in the fridge for a week, or in the freezer for up to 2 months.
