- Wash and drain quinoa and keep aside.
- Take a deep pan and add one tablespoon of oil.
- Roast the washed and drained quinoa for 5 minutes on medium flame.
- Then add the water and cook till the water absorbs.
- Remove from the flame and keep covered for 5 minutes.
- Take a deep bowl and add cooked quinoa in it.
- Then add scrambled bread, flour, carrot, capsicum, coriander, chillies, chilli powder, turmeric, roasted cumin and coriander powder, broccoli florets, salt, and cheese. Mix well.
- Divide the mixture into equal portions and roll out each portion into a 50 mm. (2”) flat round tikki.
- Heat a non-stick tava (griddle) and grease it using oil (as required).
- Cook each tikki till they turn golden brown in colour from both the sides.
- Serve hot with green chutney or ketchup. Enjoy!
